My previous attempt to make fluffy pancakes without eggs a la American pancakes was not successful (thanks to which we have appeared, and this is a plus :).

But I did not give up and continued to gnaw on the cactus, in the sense of experimenting. And, you know, folk wisdom worked about the inevitability of the result of long torment. I can now proudly declare - I made them in every sense!

Who wants to know how to bake thick and fluffy American kefir pancakes without eggs? Follow me, please…

For thick and fluffy pancakes on kefir, we need:

  • 0.5 l. kefir;
  • 2 cups of flour;
  • 3 tsp Sahara;
  • a pinch of salt;
  • 1 tsp soda;
  • 2.5 tsp vegetable oil;
  • honey, syrup, jam in any quantity.

First, dissolve soda, salt and sugar in kefir. It's time for us to spit!

Add flour to kefir and with an ordinary fork mix everything quickly so that there are no lumps.
So we got the dough for lush pancakes on kefir. Somehow everything is suspiciously easy and simple, right?

No need to wait for a catch, it will not. Everything is actually very simple. We heat up the pan. We add vegetable oil to the dough and mix it again, after which we put the dough into the pan in semicircular ovals (semi-oval circles?) - in the form of large pancakes, in general.

Cover the pan with a lid and fry the pancakes over low heat until the surface of each pancake stops spreading. And as soon as it stops, we turn our pancakes over. You can already see how lush, thick and beautiful they are.

We continue in the same spirit. The dough is getting smaller and smaller, and the pile of lush pancakes is getting higher and higher ...

The most wonderful thing is that these pancakes themselves are not at all sweet, which means you can pour honey, syrup, jam or condensed milk on top, and then imagine how, on an early summer morning, an American diner puts a plate of pancakes in front of you and says: Enjoy! That is bon appetit!

Ingredients:
  • 2 large zucchini
  • 3 art. spoons of cornmeal
  • 4 things. fresh green onion
  • 1 st. tablespoon ground flaxseed + 3 tbsp. tablespoons of water (can be replaced with 1 egg)
  • 2/3 (1 cup - 250 ml) cups oat flour gluten free
  • Salt, black pepper, cumin, ground garlic (to taste)
  • Unscented vegetable oil (for frying)
Recipe
  1. Three on a grater zucchini. You don’t need to squeeze anything, zucchini juice will come in handy for us.
  2. Finely chop the green onion.
  3. Mix seed and water. If you don’t have anything like this, I recommend taking 1 chicken egg.
  4. Add spices, seeds, 2 types of flour and mix.The dough should be very pliable.
  5. We form fritters. Water will help you with this: just wet your hands with water. This will prevent the dough from sticking to your hands.
  6. Fry the pancakes on both sides in oil or bake in the oven at 165C / 325F.

It happens that you urgently need to eat a lot of bananas :) Everyone knows that they begin to darken quickly. So, if you do not have time to eat them, they will become the ideal basis for this dish. Moreover, the sweeter the bananas, the sweeter the finished pancakes.

Banana fritters recipe:

1. Peel bananas, cut into pieces and begin to knead. This can be done with a blender, or you can just use a fork. The result should be a thick banana puree.

2. After we add flour, in my case it was whole grain flour, but regular flour will do. Mix everything thoroughly. The dough should be thick, like on traditional plump pancakes.

3. Since the bananas are ripe, they will add sweetness to the future dish, so these wonderful vegan pancakes are cooked, and, accordingly, without milk.

4. To make future vegan pancakes airy and fluffy, in ready dough add a little soda, hydrated with acid. In my case, it was wine vinegar. Mix everything thoroughly.

5. We begin to fry. To reduce fat levels ready meal, when frying, I recommend using a silicone brush to apply vegetable oil. It helps distribute the oil in a thin layer throughout the pan. Fry vegan pancakes on both sides.

Ingredients:

1.5 cups flour
- 3.5 teaspoons baking powder
- 3 tablespoons of sugar (if you like it sweeter, you can put a little more)
- 1 teaspoon salt
- 1 cup of any plant-based milk
- 2 teaspoons apple cider vinegar
- 1 tablespoon ground flax seeds
- half a glass of water
- 3 tablespoons vegetable oil
- 1/2 teaspoon vanilla

Cooking method:

1. In a bowl, mix flour, baking powder, salt and sugar. Make a recess in the middle.
2. In a separate bowl, mix any vegetable milk, vinegar and ground flax seeds. Mix everything vigorously until smooth.
3. Pour the resulting mixture into the recess in the dry ingredients mixture. Add water, oil and vanilla to the same place, and mix everything again until smooth. But not too long.
4. Let the dough rest for 10 minutes. Then heat the pan over medium heat and add quite a bit of vegetable oil. We spread the dough with a spoon - for each pancake, spoons of 3.5. Fry on each side for 4 minutes. Pancakes should rise and brown. If necessary, add a little more oil while frying.
